EXPERIENCE RANGE

In the beginning, there was St Louans… This is the original terroir of Chinon, where the first vines of what would later become the appellation flourished. Château de St Saint Louans is a reference in the appellation and a real treasure. We were fortunate to acquire it at a “candlelight” auction in 2006. After a year of vineyard and trellising restoration, including some old vines planted in 1929, we produced our first cuvée in 2007. Located at the western end of the hillside that delineates the right bank of the Vienne River near Chinon, this vineyard’s situation is extraordinary and its terroir unique. The bedrock is a limestone spur : on the surface, a thin layer of sandy limestone that warms quickly with the first spring sunshine, and underground, an upper Turonian limestone, the “tuffeau jaune de Touraine,” which retains water well. By the time of harvest in early October, the grapes are well-ripened

CUVÉE STORY

To express the strength and finesse of this special terroir, the entirety of the grapes is respected from vine to vat and then to press. After hand harvesting, vinification and aging in barrels for 18 months take place at the Panzoult winery, in accordance with the quality standards of Christophe Baudry and Jean-Martin Dutour. Vinification is gentle and prolonged. Production is very limited.

TASTING

The nose combines the freshness of pear and pineapple aromas with the warmth of Tonka bean and nutmeg. On the palate, the wine reveals its substance and complexity : a soft attack gives way to citrus liveliness rounded out by spices and pastry notes. Beautiful length on the palate. A gastronomic and age-worthy wine that will reveal its full elegance after some time in the cellar.

FOOD & WINE PAIRING

Excellent with fish and seafood, starting with scallops. A perfect match with cheeses. Less conventional with spicy dishes (Thai curry). It also pairs beautifully with vegetable dishes, complementing the roundness of pumpkin, echoing the nutty taste of rutabaga, or softening the vegetal notes of asparagus.
